Summertime Strawberry Cake

The first sure sign that summer is FINALLY on its way is yummy strawberries at the store!  Sure, we have been enjoying our frozen berries all winter as well as our homemade berry jam… There is just something about fresh berries that sings summer.

This cake tastes like strawberry shortcake with less sauce. It would be great for potlucks or BBQ’s!

I found the original frosting too sweet so I modified it to fit our tastes, I am sure you will love it!

Summertime Strawberry Cake



~ 1 Package White Cake Mix

~ 1 Package Strawberry Gelatin Mix (3 Oz)

~ 3 Tbs Sugar

~ 3 Tbs Flour

~ 1 Cup Water

~ ½ Cup Oil

~ 2 Eggs

~ 1 Cup Diced Strawberries


~ 5 Cups Powder Sugar

~ ½ Cup Butter

~ 1 Cup Crushed Strawberries


Directions: Mix together cake mix, flour, sugar and gelatin powder.

Add oil, water and eggs. Mix well.

Fold in strawberries.

Pour in to 2 greased round baking dishes and bake for 25-30 min at 350 degrees.

Let cool.


For frosting mix butter, powder sugar and crushed strawberries with electric mixer.

Once smooth chill for 30 min before frosting cake.

Put frosting between layers and over top of cake.

I found this frosting too sweet. For a less sweet option try this. Using 1 ½ cup heavy whipping cream, whip until stiff peaks form. Then add 1 cup (more to sweeten) of above frosting. This made for a lightly sweet creamy frosting.
