Homemade Blueberry Pie Filling

This time of year we are really trying to use up things in the freezer. Its time to dig out lost fruit and use it up, fresh fruit is on its way.

I do not know why anyone would ever buy pie filling. Seriously, this is so easy and there are no nasty fillers or additives. It bothers me when I buy a can of filling and read the ingredients… What are all those ingredients? This recipe is simple and SO tasty! Not to mention all the fun you will have picking berries!

Homemade Blueberry Pie Filling


~ 7 Cups Blueberries (Fresh or Frozen)

~ 1 ½ Cups Sugar

~ 4 Tbs Cornstarch

~ ½ Tsp Salt

~ 1 Tsp Lemon Zest

~ 3 Tbs Lemon Juice


Directions: Place all ingredients (except lemon zest and lemon juice) in a medium sauce pan.

Smash berries with a potato masher, large berries and whole berries are fine.

Stir frequently until mixture starts to thicken. Once mixture begins to thicken reduce heat to low and allow to simmer 5-10 minutes until desired thickness is reached.

Remove from heat and add lemon zest and juice.

Stir well. Allow to cool slightly before using in a pie.
