High Protein Bean Salad

With baby adjusting to life on the outside and settling in to a great nursing pattern I am trying to get my pre baby body back. With summer comes family gatherings and fun BBQ’s I always have trouble finding non mayonnaise dishes. It seems there are not typically healthy options.

This bean salad easily makes a healthy and tasty option. Add some of veggies and fruit and you have a tasty and high protein       option. If your not worried about “diet” options no worries. This salad is yummy and full of flavor that every one will like.


 

High Protein Bean Salad

 

Ingredients:

~ 1 Can Garbanzo Beans

~ 1 Can Black Beans

~ 1 Can Diced Tomatoes

~ 1 Large Carrot

~ 3 Sweet Peppers

~ 6 Cloves Crushed Garlic

~ ¼ Cup Balsamic Vinegar

~ ¼ Cup Olive Oil

~ 1 Tbs Italian Seasoning

~ 1 Tbs Brown Sugar

~ 1 Tsp Salt

~ 1 Tsp Pepper

~ 1 Cup (uncooked) Wheat Berries

 

Directions: In a small bowl mix together; balsamic vinegar, oil, garlic, sugar, and seasonings. Set aside. Cook wheat berries per package instructions. Grate carrot and chop peppers in small pieces.

In a large bowl mix together; beans, tomatoes, carrots, peppers and cooked rice.

Pour vinegar mixture over bean mixture and mix well.
