Lets face it dinner time can be a rush ANY day of the week! In the winter it gets dark so fast and it seems everyone has sports or some extra activities going on. In the summer we tend to try and squeeze ONE MORE thing in before dinner. I seems try as I might there are days I forget to plan a side dish!
These potatoes are the life saver in those situations. Easy, chop them up add all the ingredients and either toss them in the oven or on the grill. They are sooooooooo tasty! Even in a serious pinch chop up some meat and brown it up a bit and toss it in too! By the time the kids are done with homework or out of the bath these are ready!
If for some reason you do not like rosemary, change it up! Try Thyme or Oregano… Mmmm!
Grilled Rosemary Potatoes
~ 1 Pound Potatoes
~ 1 Sweet Onion
~ 4-6 Cloves of Garlic
~ 2 Tbs Fresh Rosemary
~ 4-6 Tbs Olive Oil
~ ½ Tsp Smoked Paprika
~ Salt and Pepper to Taste
Directions: Preheat grill (if baking preheat to 350). Chop potatoes in 1 inch cubes, the smaller the quicker they cook! Dice onion in small pieces. Add all ingredients except rosemary to a large bowl.
Mix well to coat potatoes.
Peel rosemary from stem and chop leaves.
Mix in to potatoes.
Place potatoes in foil and fold up seams.
The smaller the packet the quicker the cook time.
If you are baking place potatoes in a baking dish and cover with foil. Grill about 15 min or until potatoes are tender.
Baking takes about 25 min. Serve hot!
