This week here in Michigan it has been so beautiful! Temps have been hanging in the high 50’s even maybe the low 60’s with lots of sun it got me in the mood for some grilling.
I like to change up the “same old” occasionally. We just recently bought a whole lamb to have butchered and I thought what a better time then now to try out some Kabobs! Mmmm, I love good lamb! If you have never had it, it is worth a try! If the idea of lamb bothers you this recipe is terrific on chicken and beef as well as venison!
We like more meat on our kabobs the veggies, but this is a very adaptable meal! If you want more veggies, put them on! Sky is the limit!
Greek Style Kabobs
~ 1.5 Pounds Meat
~ ¼ C Lemon Juice
~ ¼ C Olive Oil
~ 4 Cloves Garlic
~ 4 Tbs Fresh Oregano
~ 1 Tbs Smoked Paprika
~ 1 Tsp Salt and Pepper
Directions: Cut meat in 1/1.5 inch cubes. Place meat in a dish and set aside.
Crush garlic and finely chop oregano. Add oil, lemon juice, paprika, and salt and pepper.
Once well mixed pour over meat and allow to marinade at least 1 hour or up to 12 hours.
Once marinated place meat on skewers. Add vegetables as desired.
Brush hot grill with oil and place skewers on hot grill. Cook 8-10 min per side or until cooked as desired.
Serve with pita bread and homemade Tzatziki Sauce.
