This weekend here in Michigan we have had wonderful weather! It is a sure sign that summer is on the way. One of the best parts of summer for us is our huge garden full of veggies! I have trouble waiting for the homegrown ones and will quickly purchase produce from the store as it comes in to season.
Coleslaw is such a summer food. It seems to go with any meal you can cook outside. My husband loves it with ribs and my brother piles it on his pulled pork sandwiches. I, personally, like it even better the next day. The flavors are all well blended and the cabbage has turned just a touch soft. Mmm!
Any way you choose to enjoy this Coleslaw you wont be let down!
~ ½ Head Green Cabbage
~ ½ Head Purple Cabbage
~ 2 Carrots
~ 2 Sweet Peppers
~ 1 Red Onion
~ 1 Cup Mayonnaise
~ ¼ Cup Sugar
~ ¼ Cup Deli Mustard
~ ¼ Cup Apple Cider Vinegar
~ Salt and Pepper to taste
Directions: Fine chop/shred all veggies and set aside.
In a separate bowl mix all wet ingredients.
I like to taste test my dressing at this point. Sometimes I add a bit more sugar and other times more mayo. Place veggies in a large bowl and pour dressing over top.
Mix well. Add salt and pepper to taste. Refrigerate about 1 hour prior to serving.
